Easy Pumpkin Bread

Last year I tried the Pinterest two recipe pumpkin muffins for Fall. It was the two/three ingredient muffins. While they were easy and tasted okay I ended up just not looking the texture and consistency. So fast forward to a few weeks ago. I was craving pumpkin bread and had the spice cake mix and a can of pumpkin on hand. I also had one egg left and milk in the fridge so I decided to mix the first three together and than add in a dash of milk (2 tablespoons) before baking.  
This was just as easy as the Pinterest recipe but SO MUCH better! 

So many of the extra delicious pumpkin bread and muffins are extremely involved. While I do LOVE pumpkin I do not want to have to spend two hours baking a treat so this was a great alternative. Bake it in a pretty pan and drizzle some frosting on for an easy neighbor gift or use muffin tins instead and send these to school.

I am certainly not a revolutionary cook, but I was proud of my little cake. I think my taste buds were ever prouder. If you are looking for something a little tastier than the Pinterest recipe simply add one egg and a little milk to your next pumpkin baking and voila! Happy Fall baking!

I make the Libby's pumpkin bread kit and sub oj for the water, and add Guittard milk chocolate chips. I skip the frosting, it is so easy and delicious! Everyone loves it and wants the recipe. Love the new look:)

I love this idea! I'm envious of your ability to enjoy sugar ;) However, you might be surprised if you knew of how many ideas you have given me that I've been able to make 'sugar and gluten free', for my hypo-glycemic self! Thank you so much for this one, I love anything pumpkin and this is a quick treat.
