I received several emails regarding the cole slaw I mentioned I made for Saturday's BBQ so I felt a post was appropriate. I am one that enjoys most summer/BBQ sides, but can tend to be a tad bit picky when it comes to cole slaw. I do not like mine to be too sweet or two creamy so I amended I found to create what I consider perfect.
16 oz Bag of Cole Slaw (I used the regular kind as the angel hair can tends to fall apart, but either will work)
3 Chopped, Green Onions
2/3 Cup Extra Virgin Olive Oil
2/4 Cup Distilled White Vinegar
1 & 1/2 Teaspoon Salt
1 & 1/2 Teaspoon Ground Pepper
1 & 1/2 Teaspoon Italian Seasoning
10 oz Feta Cheese Crumbles (I actually put in almost 16 oz and it was amazing!)
1/4 Cup Water
Mix cole slaw and green onions together in a bowl and set aside. In a separate bowl mix oil and vinegar. Add water, salt, pepper and Italian seasoning to oil/vinegar mix. Pour the 'dressing' mix over the cole slaw and mix in feta cheese. Cover cole slaw and refrigerate- I am sure an hour or two would do, but I left mine in overnight so the flavor really set in.
